Sugar Bush is a maple, birch, and sea salt sparkling water. I lovingly refer to it as “The Champagne of Trees” as it looks and feels like Champagne in a wine glass - which I recommend to drink it out of. The dark maple syrup comes from my hometown in the Rideau Lakes and is made by Gunnebrooke Farms. I am so lucky that they are willing to sell me the super dark syrup in these volumes - its the most precious grade to those who make it. On warm days during syrup season, the sap that flows makes a very dark syrup with a more robust flavour. I love the dark syrup for the soda because I can use less and get the depth of flavour and colour. The birch bark and birch leaf are extracted in tinctures and blended into the salted soda. Birch bark has an amazing cola/menthol flavour while the birch leaf is super fruity. They both add a bit of spice to this version. This is my personal favourite seasonal soda that I make.
