Blend of 50% direct press organic L'Acadie Blanc from Appletop Farm in Thornbury, Ontario and 50% organic whole cluster carbonic Cabernet Franc from Heather Laundry in Niagara. The Cab Franc was harvested early November in 2024 and was partially dried on the vine for super deep concentration. It was packed whole cluster into stainless steel and left untouched for a month before pressing. This wine is a blend of my lightest and darkest finished wines from 2024. Super carbonic and spicy, uncomplicated, low tannin, earthy with a pear-ish greenness from the L'Acadie.

I recommend that it be served chilled.

No fining, no filtering and no sulphur added or other additions of any kind.
