Jarel 2023

Jarel is a rosato of 50/50 late harvest (October 24 2023) L’Acadie Blanc and Petite Pearl. The hybrids were pressed together as a direct press and aged on their lees in stainless steel for 7 months and was racked once. Native yeast fermentation that kicked off within 12 hours of pressing. Unfiltered and zero additions. 100% of the fruit is from Appletop Farm in Thornbury, Ontario which is certified organic and uses biodynamic practices ( previously Demeter certified. They kept up the practices but did not keep up the licence because they thought no one seemed to care).

Giosuè 2023

Giosuè is a rosato of 50/50 Riesling and Cab Franc pressed together as a direct press and aged on its lees in stainless steel for 7 months and never racked. The Riesling is from a small plot of only Riesling planted near Georgian Bay. Even though it was harvested November 5th 2023 it came in at under 17 brix. The Cab Franc was grown by Eric Willms in Niagara. Native yeast fermentation. Unfiltered and zero additions.

'Birthday' Labrusca Nouveau 2024

 This year my birthday falls on Nouveau Day and so I made a nouveau named “Birthday”. This young, fresh, low alcohol, crystal clear red with a super slight fizz is made 100% Niagara Fredonia. The vines are over 100 years old which describes the historical identity of this grape and our wine-growing history in Ontario. Before vinifera, Ontario was a grape-growing and wine-making region that was making wines only from gapes like these for a few hundred years. 

Carbonic whole cluster 

fermented in stainless steel. 

Zero sulphur additions. Unfined, unfiltered. Dry. 

Dark green sparkling bottles under red crown cap.

8% alc./vol.    750ml    200 bottled produced. 

'Arden' Honey Soda

Sparkling Honey Soda made with this year’s spring honey from
the Don Valley. Honey was harvested by Toronto Bee Rescue. A new
edition in the honey soda family that focuses on single seasons and
places. This spring honey has a beautifully delicate and waxy palette -
the carbonation has also been adjusted higher for this run. 50 cals, 355ml
beer cans, 0.0% alc/vol,Ingredients:
Water, Spring Honey, Canadian Sea Salt from Vancouver Island, Citric

Acid. HACCP certified.
