After 4 years of attempting to make this drink and failing, I feel I’ve finally figured out how to capture the delicate flavours of the fresh lilacs that explode all over PEC in June. Lilac season is a signal of summer and it was very important to me to capture this energy as potently as possible. I used flower essence methods to be able to fix the nuances of lilacs into water. This is a sparkling water with just the fresh lilac blossoms, harvested from my neighbouring farm in PEC, and citric acid for shelf stability. The perfume of the lilacs has a really long finish and stays with you as you sip. This is a hyper-seasonal portal to an exact place - something I am always trying to do with my drinks.
