2023 "Jarel"

Jarel is a rosato of 50/50 late harvest (October 24 2023) L’Acadie Blanc and Petite Pearl. The hybrids were pressed together as a direct press and aged on their lees in stainless steel for 7 months and was racked once. Native yeast fermentation that kicked off within 12 hours of pressing. Unfiltered and zero additions. 100% of the fruit is from Appletop Farm in Thornbury, Ontario which is certified organic and uses biodynamic practices
