Lilac season is a signal of summer and it was very important to me to capture this energy as potently as possible. I used flower essence methods to be able to fix the nuances of lilacs into water. This is a sparkling water with just the fresh lilac blossoms, harvested from my neighbouring farm in PEC, and citric acid for shelf stability. The perfume of the lilacs has a really long finish and stays with you as you sip.
